Korean food for the soul
Of the traditional Korean dishes, kimchi is perhaps one of the most well-known outside of South Korea. Commonly used as a side dish which is presented together with the meal (banchan), the mixture of fermented vegetables (most often napa cabbage and daikon radish) is quite versatile and can also be used as an ingredient in several cooked dishes.
Though there are number of different kimchi recipes, our favorite can be found here. Keep in mind that the fermentation process takes time, so plan ahead if you intend to make this delicious dish!
